The notification emails, in current form, only have a limited amount of info.

Example:

A new help desk ticket #80 has been created 'Amit Gupta'.
You may see the status here: ...

How can I add more information to these notifications?

The only way would be to alter the code. However, you would lose any changes when you upgrade ADefHelpDesk.

We will look at the requests that get the most votes.

I understand I'll need to alter code and re-insert this code after an upgrade.

Can you point me in the right direction? Which file and where do I need edit?

You can actually change the text in the emails by simply editing the files:
EditTask.ascx.resx
View.ascx.resx
